Some mornings I can feel fall trying to peek around the corner, so I know that winter isn’t far behind. If there’s one thing I love in the winter time, it’s coming home to a big bowl of hot soup. I can’t say I’ve got a favorite, but I can truthfully say that Broccoli Cheese Soup is one of my favorites. However, I had not a clue there was a low-carb version around until Jamie Van Eaton’s Examiner.com post popped up in my Blog Reader. Just in time for soup season she’s provided us with what sounds like a wonderfully cheesy and easy cold weather treat. She calls it On Wisconsin! Broccoli Cheese Soup.
I like easy recipes and I like recipes that have easy-to-find common household ingredients as much as possible and this one pretty much fits that description. ThickenThin, a flour thickener substitute is probably not available at Wally World, but may be available at some of the whole or health food stores. In addition, there are several alternative ways to thicken soups and sauces including xanthan gum, which I’ve used successfully.

I subscribed to Jamie, Jimmy Moore, Amy Dungan and Linda Duffy, all low-carb writers at Examiner.com Some pretty interesting stuff sometimes.
I’ve tried to use a minimalistic approach in creating my blog. Some just are so ‘busy’ they are hard to read. It’s about content in my opinion. I don’t have anything to sell right now, so I have no reason to have ads stuck everywhere. There is a time and a place for that. Someday when I become a famous LOL author I shall have a circus of a blog! Yeah right!

I’m with you about soup, nothing more comforting than a big ol’ cup of soup on a cold day. I’ve come up with several low carb version and while broccoli cheese is my families favorte cream of cauliflower with lots of cumin rules the roost for me. It’s thick and warm and dang… wish I had a bowl right now, ‘cept I just finished off the chicken chili for lunch.
I subscribe to all those as well, and I never miss Jamie’s blog either. She definitely “rocks my socks” as she would say.

OK, I hadn’t heard of cream of cauliflower soup but yours sounds great cause I love me some cumin. It’s one of my favorite spices in chili! And I’ll just go ahead and say one of my all time favorite herbs is cilantro! Wife makes homemade salsa and I order my batch with extra cilantro and of course extra hot peppers!
